FILIPINO FAVORITE II

CHAMPORADO

Champorado is a sweet chocolate rice porridge in philippines cruisine. it is tradionally made by boiling sticky rice with cocoa powder, giving it a distinctly brown color and usually with milk and sugar to make it taste sweeter. however, dry champorado mixes are prepared by just adding boiling water. it can be served hot or cold and with milk and sugar to taste. It is served usually at breakfast and sometimes together with salty dried fish locally known as tuyo.

LUGAW

Lugaw is the Filipino name for congee. Very similar to style of congee..it is typically of a consistency , retaining the shape of the rice while achieving the same type of texture. It is boiled with strips of fresh ginger. Other flavors may be added according to taste. Most often it will be topped with scallions and served with crispy fried garlic.


DINUGUAN

Dinuguan or pork blood is a filipino, savory stew of blood and meat simmered in a rich , spicy, gravy of pig blood, garlic, chili's and vinegar. The term Dinuguan come from the word dugo which means blood. it is similar to a Singapore dish, pig.s organ soup. The only different is it doed not have vegetables in it.


PANCIT BIHON

Pancit is quick-cooked noodle dish that is one of the quintessential meals of filipino cuisine. All kinds are available , and pancit is as popular at street stands as it is at family gatherings. The most common variety is pancit bihon, with vermicelli and a mix of meat and vegetables.

FILIPINO FAVORITE



BIKO

The BIKO recipe here is just one of the ways of making a Filipino sticky rice treat. it's not a easy process, its just hard on the arm because of the mixing of the sticky rice.
BIKO is the quintessential Filipino native delicacy.
it is made from glutinous rice that is first partially cooked, then mixed with coconut milk until very thick ion consistency.
The topping is LATIK or the fried coconut milk curd, set at the center of each slice
.


KUTSINTA OR BROWN RICE CAKE

Kutchinta is a type of kakanin,. it's a sticky round dessert that you can eat alone or dip into dried coconut. the texture would be like a tapioca ball/jelly like... it's a good dessert and quite popular at filipino parties.


PUTO

Puto is the Filipino term for "rice cake" and is cook by steaming . Puto are usually white and round and can vary greatly in size. it is usually served with grated coconuts.
Puto is usually eaten as a merienda, a light meal or snack especially in the afternoon.

FILIPINO DESSERT


LECHE FLAN

Leche Flan is one of the favorite Filipino desserts which is very popular during special occasion or gatherings especially Christmas and birthdays.

Ingredients:10 egg yolks1 big can of evaporated milk1 big can of condensed milk1 cup of sugar3/4 cup of water1 tsp of vanilla extract

Directions:
  • In a saucepan, mix the sugar and water. Boil until sugar is melted and caramelized.
  • Pour the caramelized sugar into aluminum moulds which can be of shape like round, oval, or square. Spread the caramel into the molds.
  • Mix well the evaporated milk, condensed milk, egg yolks, and vanilla. It's better if you mix them with a blender of smoothness.
  • Slowly pour the mixture on top of the caramel on the moulds. fill about 1 to 1/4 inch thick.
  • Cover the moulds with aluminum foil.
  • Cook by steaming for about 20 minutes or by baking it for about 45 minutes. make sure you pre heat to oven about 370 degrees before baking .Letche flan is cooked when you insert a knife or toothpick- it comes out clean.
  • Let it cool and refrigerate.


CASSAVA CAKE



Cassava Cake

Pre heat oven to 350F degrees. Line an 8-inch square pan to use, I guess you could use any baking pan or oven- proof deep dish) with wilted banana leaf or simply butter pan.

In a large bowl, combine grated cassava eggs, sugar,evaporated milk, condensed milk coconut milk and melted butter, mix well, Strain a cup of the liquid and set aside for topping.

2 cups grated cassava

2 eggs

1 cup sugar 

3/4 cup evaporated milk

1/4 cup condensed milk

1/2 cup coconut milk

1/4 cup butter, melted


SUMAN

Suman is a traditional Filipino rice cake that is ussually from glutinous rice (Locally referred to as "MALAGKIT") Aside from using glutinous rice, some variations also use root crops such as cassava.
Ingredients:
  • 2 1/4 cups glutinous rice
  • 1 teaspoon lye water
  • 2 cups water
  • 1 whole banana leaf, cleaned
Place the glutinous rice in a mixing bowl then pour in water. Stir and soak for 2 to 3 hours. Drain excess water from the mixing bowl then add lye water and stir thoroughly. The mixture will turn yellowish. Let stand for 30 minutes. Prepare the banana leaves. Arrange the banana leaves by placing the larger leaf first in a flat surface then put the smaller leaf in the center of the larger leaf. Arrange the folded banana leaves with rice mixture in a cooking pot then pour in enough water. turn on heat then let boil. Simmer for 80 minutes.Serve with white sugar, brown sugar or latik.

KARE KARE

kare kare is traditional filipino food, it is made from peanut sauce with a variety of vegetable , stewed oxtail, beef, and occasionally offal or tripe. meat variants may include goat meat or chicken. it is often eaten with bagoong (shrimp paste) sometimes spiced with chili and springkel with calamansi juice..



PINAKBET

Pinakbet or pakbet is a popular ilokano dish, from Philippines  although it has become popular throughout the archipelago. the word is the contracted form of the ilokano word pinakebbet, meaning "shrunk"or "shriveled". the original ilokano pinakbet uses bagoong of fermented monamon or other fish while further south, bagoong alamang is used. the vegetables used in this dish include native bitter melon, eggplant, tomato, okra,string beans,chili peppers,parda, winged beans, and others.



KWEK KWEK

Kwek kwek or Orange eggs are boiled quailed eggs coated with an orange batter and deep-fried until the batter is crispy. This is categorized as a street food and are sold along with fish balls, squid balls, and chicken balls.


DRIED FISH (TUYO) 

Dried fish or TUYO is Philippines delicacy Usually served with fried garlic rice, an egg either sunny side up or scrambled, vinegar with red hot chili pepper as a dip and a hot cup of coffee.

TOFU AND PORK (Tokwa't baboy)

Tokwa't Baboy is a dish composed of boiled pork and fried tofu. The sauce made of vinegar and soy sauce gives life to this dish. Generally , this is considered as an Appetizer and a side dish.


PANCIT PALABOK

Pancit palabok is a noodle dish with shrimp sause and topped with several ingredients such as cooked shrimp, boiled pork, crushed chicharon, tinapa flakes, fried tofu, scallions and fried garlic. A very tasty treat that is sure to relieve your hunger.

Paradise Island Resort


Paradise Island Beach Resort is white sandy beaches and brilliant waters, it has grown into a full fledged entertainment destination. Located in calilic, Babak, Paradise Island is just a short boat or ferry ride from Davao City.







 The place is very well maintained, with their more than adequateness resort personnel. i commend their courteous personnel who smiled and attended to us promptly.


They have  playground, badminton area and an aviary.
